About the Recipe
Seaweeds are so nutricious it is almost a crime not to have them feature now and again in your diet. Wakame, which is a species of kelp, is full of iodine, calcium, copper, folate and fibre, not to mention protein. You can buy wakame in both fresh and dried forms quite easily online. I regularly make this salad as a side vegetable dish for dinners but it is quick enough that you could prepare it for a lunch too.
Ingredients
1 medium cucumber
2.5 tbsps rice wine vinegar
1.5 tbsps sugar
2 tbsps dried wakame seaweed
1/2 tsp salt
1 tsp toasted sesame seeds
Preparation
mix the sugar into the rice vinegar or shake in a jar until the sugar has dissolved
soak the dried wakame in water for 5 mins
slice the cucumber as thinly as you can (so it will soften in the marinade)
sprinkle the salt over the cucumber & mix well then leave for 15 mins
using your hand, squeeze the water out of the wakame and the cucumber and mix them together
add the vinegar marinade and stir well
garnish with the sesame seeds just before serving
