About the Recipe
I get a lot of my inspiration from dishes I eat in restaurants and these sweet potato mocihi are one example. The first time I ate these, I though, "I just have to make these myself." As it happens, potato mochi are really a cinch to make. If you like the ocassional Japanese style comfort food, these are definitiely for you!
Ingredients
Makes 6 Potato Mochi
300g sweet potato
half a small mozzarella cheese (approx. 60g)
1.5 tbsp sugar
4 tbsp potato flour
1/2 - 1 tbsp vegetable oil
for the sauce:
2 tbsp sugar
2 tbsp soy sauce
30ml water
1/2 tsp potato flour
Preparation
peel and cut the sweet potato into small chunks
place the sweet chunks in a small saucepan. bring to the boil and simmer for about 10 minutes or until cooked
meanwhile, to make the sauce, put 2 tbsp of sugar, 2 tbsp of soy sauce, 30ml water &1/2 tsp of potato flour in a small bowl and mix well. set aside
cut your mozzarella into 6 slices
drain the sweet potato chunks well and mash into smooth paste with no bits
add the sugar and potato flour and mix well until you have a smooth thick paste
divide the potato mix into 6 equal portions
now, wet your hands, so that the sweet potato doesn't stick to your fingers. take 1/6 of the sweet potato in the palm of your hand. flatten the place a piece of mozzarella into the middle, fold the sweet potato over the mozzarella to form your mochi patty
repeat this with the rest of the sweet potato and mzzarella
heat the vegetable oil in a frying pan. fry your mochi for about 2 minutes. turn over and fry another 1-2 mins until the mochi is lightly browned
remove the sweet potato mochi to a plate.
put the sauce mixture into a frying pan. stir until it begins to bubble then reduce the heat. return the sweet potato mochi back to the pan to get a coating of the sauce
your sweet potato mochi are now ready to serve
