Stir fried Lotus Root

About the Recipe

You can find lotus root in most Asian stores and online. You can boil and roast lotus root but I think it is better fried - it retains a nice crunchy texture and has a nutty, slightly beery flavour - it's also full of lots of good things like iron, thiamin, and Vitamins B & C. Ingredients

200g / 7oz lotus root

100g / 3.5oz mangetout

1/2 red pepper

1/2 yellow pepper

1 tbsp veg oil

1/2 tbsp mirin

2 tbsp soy sauce

1 tsp sugar

Preparation

peel the lotus root and soak it in water with a little vinegar for 15-20 mins


cut the lotus root in half lengthways and then cut into 5mm / 1/4in slices


remove the strings of the mangetout


cut the peppers into bite size pieces


heat the oil in a frying pan. add the lotus root and stir-fry for 2 mins


add & fry the mangetout for 1 min


add & fry peppers for another 2-3 mins 


add the mirin, soy sauce & sugar and stir fry for 30 secs


serve with a bowl of rice as a side dish
