About the Recipe
If spinach feels virtuous but eating it leaves you feeling a little underwhelmed, then this is the recipe for you. Not only is this a great way to eat one of nature's richest sources of iron, but adding sesame gives it both a flavour and nutritional boost too. What's more it's ready in a jiffy and dead simple to prepare. Spinach and sesame makes a great starter or vegetable side dish.
Ingredients
200g fresh baby spinach
2 tbsp toasted white sesame seeds
1 tbsp sugar
2 tsp soy sauce
1 tsp mirin
some toasted white sesame seeds for topping
Preparation
rinse the spinach well
bring a medium size pan of water to the boil. blanch the spinach for 1 minute and then drain
to prepare the sesame sauce, grind the toasted white sesame seeds using a pestle and mortar. add the sugar, mirin & soy sauce and mix well
squeeze any excess water from the spinach. (be careful with your fingers as the spinach might be still hot to the touch)
add the sesame sauce to the spinach and mix well
garnish with a sprinkling of sesame seeds. your dish is ready for serving
