About the Recipe
The humble turnip is one of the very best sources of vitamins and minerals you could think of. I shan't go into the details here but suffice to say that you really should include turnip as one of you "5 a day" vegetables. This turnip uses turnip liced very thin and then marinated to make a crunchy, tangy fibre rich dish.
Ingredients
1 turnip (approx. 250g)
60g choysum
1 slice ginger
1/2 tsp salt
for the marinade:
1 tsp lemon juice
2 tbsp rice vinegar
1 tbsp sugar
1 tsp toasted white sesame seeds
Preparation
peel, the turnip. cut it in half and slice as thinly as possible (you can also use a slicer, if you have one)
rinse the choysum and cut into 2cm lengths
finely slice the ginger
put the turnip, choi sum & ginger in a bowl, sprinkle with the salt, mix well and leave to stand for 15 mins
to make the marinade:
mix the lemon juice, vinegar & sugar well in a bowl
now return to your turnip and choi sum. grip all the vegetable in the bowl in your hand and squeeze out any excess liquid. repeat 2 or 3 times, draining any liquid and add the marinade, stirring well
