Lotus Root Chips

About the Recipe

Are they chips or crisps? It depends on where you come from, doesn't it? In the USA, these are chips while the Brits would call them crisps. Whatever you decide to call them, I'm sure you'll find them delicious.

Ingredients

150g fresh lotus root


1 tsp vinegar


some kitchen paper


veg oil for deep frying


a little salt and dried parsley for garnishing

Preparation

peel the skin off the lotus root and slice it as thinly as possible


soak the slices in water with 1 tsp vinegar for 10 mins


drain on kitchen paper


fill a pan with 2cm of veg oil and heat to 180’C


add a few lotus slices at a time & deep fry until golden brown


drain on kitchen paper


your lotus root chips are ready to serve. eat as a snack 

or use as garnish for salads or other dishes
