About the Recipe
Okra is mostly associated with Indian cooking but it's used in traditional Japanese cuisine as well. Maybe it's because of all the good things in it - trace elements, Vitamin C, antioxidants etc. So maybe you should eat a little more of it? Pan fried with a little curry perhaps? Tempted? If you are, this recipe makes enough for 2 side dishes as part of a larger meal.
Ingredients
1 tsp salt
170g okra
1/2 onion
2 cloves, garlic
1 tsp veg oil
1.5 tsp mild curry powder
0.5 tbsp tomato ketchup
salt & pepper
Preparation
rinse the okra, then sprinkle with the salt. rub the okra with your fingers to remove the stubble. rinse the okra once more
cut off the tops of the okra
slice the onion
mince the garlic
heat the oil in a frying pan, add the garlic & onion and fry for 1 min
add the okra and fry for a further 3-4 mins
add the curry powder & tomato ketchup
season with salt & pepper and fry for 1 more min
your curry fried okra is ready to serve
