Smoked Salmon Temari Sushi balls

About the Recipe

This is a super simple way to create some sushi in your own kitchen. No special skills required - just your two hands and no special kit required - just some clingfilm. But don't be deceived. Just because these Temari Sushi balls are easy to make doesn't mean they aren't anything other than absolutely delicious. The garnish is optional. Either way, I have no doubt you will love them!

Ingredients

1 cup Japanese rice  (160ml / 5.5 oz)

1.5 tbsp sushi vinegar*

120g-140g / 4 - 5oz smoked salmon slices

1 sheet of kitchen paper

a double sheet of cling film about 33cm / 12 in square

10 small lemon wedges  (optional)

1 tsp toasted black sesame (optional)


a small bowl of water


* if you don't have any sushi vinegar, use the following as a substitute:


1 tbsp sugar

1.5 tbsp Japanese rice vinegar

a pinch of salt

Preparation

first, if you need to make substitute sushi vinegar:


mix the rice vinegar, sugar and a pinch of salt in a bow until the sugar and salt have dissolved


next, to make your sushi rice:


cook 1 cup of Japanese rice using a rice cooker or a large sauce pan.


place the cooked rice in a large bowl and add the sushi vinegar, then mix well, taking care to mix with a gentle slicing action to avoid squashing the rice


place the sheet of kitchen paper over the bowl, so the rice will not dry out 


now to make your Temari Sushi balls:


cut a 60 cm length of cling film and fold in half


thinly slice the lemon and cut into 8 smal segments


cut the smoked salmon into 4 cm / 1.5 in squares (approx.).  you'll need 18-20 pieces


now, wet a dessertspoon in the bowl of water. using the wet dessertspoon, take up a spoonful of sushi rice and gently form it into a small rough ball in your hand 


pick up the cling film and lay it in the palm of your hand. place 1 piece of smoked salmon in the middle of the cling film, then place the rice ball on top of the salmon. 


next, wrap the cling film around the salmon and rice and shape the rice ball by twisting the cling film over the rice ball. use your hands to shape the rice into a nice, spherical shape. unwrap the clingfilm and your first Temari Sushi ball is finished.


repeat the step above until you have used all the sushi rice. you should now have 18-20 Temari Sushi


arrange the Temari Sushi on a serving platter. garnish with the black sesame and lemon segments and your Temari Sushi are ready to serve
