About the Recipe
Eating sashimi is a sensual experience and none more so than salmon sashimi - the flesh of the salmon is quite heavy and a little oily on the tongue. I like to dress up sashimi with something more than just soy sauce, (sashimi deserves it, after all!) In this recipe, I used a dressing of soy sauce with mirin, lemon juice and a little sugar. Combined with the tang of wasabi rocket leaves, this dish really does become a treat for the senses. (If you can't find wasabi rocket, you can use plain rocket / ruccola as a substitute.)
Ingredients
200g sashimi grade salmon
for the dressing:
1/2 tbsp lemon juice
1/2 tbsp mirin
1 tsp sugar
1/2 tbsp vegetable oil
1 tbsp soy sauce
5-6 wasabi rocket leaves
Preparation
thinly slice the salmon (or ask your fishmonger to do this for
you)
to make the dressing:
combine the lemon juice, mirin, sugar, oil & soy sauce in a bowl and mix well
rinse and chop the wasabi rocket
lay the salmon sashimi on a serving plate & top with the wasabi rocket leaves
drizzle with the dressing and leave to stand for 10 mins in the fridge before serving
