About the Recipe
If you can make this recipe, it will prove two things - you like natto (hurray!) and you hae taken your sushi rolling skills to the next level. Uramaki or inside out sushi rolls are one of those things that make you think, "How do they do that?" but the technique is fairly simple. The only extra item you will need to add to your sushi making kit is some clingfilm to wrap around your sushi rolling mat. As with my other sushi recipes, I do recommend that you watch the video tutorial as well as reading the "how to" below.
Ingredients
220g natto
a few long cucumber matchsticks
1/2 tsp soy sauce
2 tsp toasted black sesame seeds
220g cooked sushi rice
1 spring onion, finely chopped
1 sheet of nori, halved
1 sushi mat, wrapped with cling film
Preparation
wet your hands or a spatula & spread 1/2 the sushi rice over a 1/2 nori sheet in a thin layer
sprinkle 1 tsp of sesame seeds over the rice and then turn the sheet over on the mat
place 2 strips of cucumber lengthways on the nori sheet, then spoon the natto over to cucumber
now to roll the sushi:
roll the lower edge of the sushi mat over to form the sushi roll, tucking the bottom of the nori into the rice at the top of the sheet
give the roll a little, light squeeze with your fingers to make sure it is well formed
repeat this process again for the second roll
cut the sushi rolls into 6 pieces each , wiping & wetting your knife between cuts
