About the Recipe
I will be the first to admit that the best way to cook rice is in a rice cooker. It's quick, saves on prep and produces great Japanese cooked rice (or any other rice for that matter.) You can pick up a simple rice cooker (the type with a sit on lid) for $25 / £20 and they do a decent job. $125 / £100 will buy you a fully programmable cooker that can do a lot more than cook rice. But if you don't have a rie cooker or the inclination to buy one, you can still cook perfectly good rice in a pan. In fact, you can do it in four easy steps.
Ingredients
480ml japanese short grain rice
550ml water
Preparation
rinse the rice 5 - 6 times until the water runs clear
drain the rice
put the rice in a saucepan with the water and soak for 30 mins
bring the water to the boil then reduce to a low simmer for 15 mins
remove from the heat and leave the rice to stand in the saucepan for 10 mins
gently fluff up the rice to remove any lingering moisture
your Japanese rice is ready to serve
