Japanese curry fried rice

About the Recipe

This is one of those recipes. You know, the ones that don't taste quite the same if you use fresh rice. It's the kind of dish that makes you think, "I'll just make a couple of extra cups of rice for the fridge..."

Ingredients

1/2 onion (80g)


1 clove of garlic


60g red pepper


60g yellow pepper


1 chicken breast (180g)


80g frozen sweetcorn


1.5 tbsp vegetable oil


1 tbsp mild curry powder


1/2 tbsp tomato ketchup


1/4 pepper


1/2 salt or to taste


1 tsp vegetable Bouillon powder


400g leftove rice

Preparation

finely chop the onion, then mince the garlic and chop the peppers


slice the breast into 2 thin fillets, then slice into strips and

cut into dice sized pieces


heat the oil in a frying pan, add and stir fry the onion, garlic & chicken for 2-3 mins


add & stir in the curry powder, bouillon powder, sweet corn & ketchup and stir for 1 min


add & stir fry the peppers for 1-2 mins


add the rice, salt & pepper to taste and mix everything together


your curry fried rice is ready to serve
