About the Recipe
Don't get me wrong - a well made meatball is a great thing - taste, nutrition and versatility. But if you sometimes hanker for a different way to present your meatballs than a simple meatball sauce, this is a great alternative. I often feature Golden curry cubes in my recipes as they seem to be easier to obtain than some other brands. But if you have, say, Torokeru or Java brand cubes at hand, those will work well in this recipe too!
Ingredients
for the meat balls:
1/2 medium onion
5g / 0.2 oz fresh coriander
500g / 17.5 oz minced beef
1 tsp garlic puree
1 tsp ginger puree
1 tsp mild curry powder
1/2 tsp salt
a little pepper
2 tbsp sunflower oil
for the curry:
1/2 medium onion
150g / 5.25oz carrot
1 bell pepper
8 small broccoli florets
1 tbsp sunflower oil
1 tsp garlic puree (or fresh)
1 tsp ginger puree (or fresh)
1 tsp cumin powder
600ml / 20 fl oz water
1 tsp soy sauce
1.5 tbsp tomato ketchup
6 Golden curry roux cubes
Preparation
to make the meatballs:
slice & mince the 1/2 onion. finely chop the fresh coriander leaves
put the minced beef in a bowl, add the minced onion, chopped coriander, 1 tsp of garlic, 1 tsp of ginger, 1/2 tsp of salt, 1 tsp of curry powder & pepper. mix everything together well
take a dessertspoonful of the minced beef and shape into a small ball (just a bit smaller than a golf ball.) repeat until all the mince is used up
heat 2 tbsp of sunflower oil in a frying pan. fry the meatballs over a medium heat, moving the pan so the meatballs seal all over. this should take about 3 minutes
now to make the curry:
finely chop the 1/2 onion. peel & slice the carrot. deseed & cut the bell pepper into small bite sized pieces. if the broccoli florets are on the large side, cut into smaller florets
heat 1 tbsp of sunflower oil in a large saucepan. add 1/2 chopped onion, 1 tsp of garlic & 1 tsp of ginger. fry for 1 min, then add 1 tsp of cumin powder and stir.
add the carrot and the water, then bring to the boil
add the meatballs, bell pepper, 2 cubes of Golden curry roux. simmer for 10 minutes
add the soy sauce, tomato ketchup, 4 more Golden curry cubes and simmer for another 10 minutes, stirring occasionally
last, add the broccoli florets and cook 3-4 mins more
your Golden meatball curry is now ready to serve
