In this data hungry world we live in, I am sure someone somewhere has carried out a poll on the most popular curry dish. It wouldn't surprise me at all if the humble chicken curry topped that chart. This is my most popular recipe bar none.

Ingredients
6 “Golden” curry cubes
650g chicken breast or thigh
160g onion
300g potato
300c carrots
1cm ginger
2 cloves garlic
1 stick celery
1 tsp cumin
1 tsp coriander
1 tbsp tomato ketchup
1 tsp soy sauce
600ml water
2tbsps veg oil for frying
Preparation
peel & cut the carrots and celery into 1 cm pieces
peel & cut the potato into 2 cm pieces
cut the onion into large chunks
peel & mince the ginger & garlic
cut the chicken into bite size chunks
heat the veg oil in a pan, add the ginger, garlic, onion, & celery and fry for 1 min
add the cumin & coriander and fry for 2 mins
add the chicken and fry for 1 more min
add the water, carrot, potato, soy sauce & tomato ketchup, bring to the boil & cook for 15 mins
add the 6 pieces of Golden curry roux
when the roux pieces have softened, mix well
simmer for another 15 mins, lid on, stirring occasionally
serve with white rice
