About the Recipe
Did you love potato croquettes when you were a child? I certainly did. They were a treat in Japan where usually the potato is mixed with some minced pork for richness making these little babies a meal in themselves. When I make them nowadays, I spice them up with some curry flavours and they're all the better for it!
Ingredients
400g potatoes
1.5 tsp salt
1/2 tbsp vegetable oil
1/2 onion (70g)
120g minced pork
1-1.5 tbsp curry powder*
a little pepper
1 tsp sugar
1 tsp tomato ketchup
25 g butter
40g plain flour
1 egg, beaten
50g panko breadcrumbs
veg oil for deep frying
some kitchen paper
Preparation
peel & cut the potatoes into 1cm slices
put into a pan with 1 tsp of salt, bring to the boil and cook for 10 mins or until softened, then drain and set aside
finely chop the onion, heat the vegetable oil in a frying pan, fry for 1 min
add the minced pork & curry powder and fry for 1 min
season with 1/2 tsp salt & a little pepper, sugar & ketchup and fry until the pork is cooked
mash the cooked potato & butter, add the pork mixture to and mix together
divide the potato mixture into 4 pieces, take 1/4 of the mixture and use your hands to form into a large croquette, repeat to make 3 more croquettes
coat each croquette with plain flour, then dip into the beaten egg and coat well with the panko breadcrumbs
heat 2 cm of veg oil to 170C, deep fry the croquettes until golden brown, turning over a couple of times to get a uniform golden colour
serve with a green salad
