About the Recipe
Shiso leaves are a must have for sashimi and are great in salads. But there's something else you can do with your harvest of leaves (if you grow shiso yourself, you'll find you have plenty of it!) You can simply mix some shiso with miso to make...yes, you guessed it - shiso miso! This is a delicious concoction which you can simply eat with rice or add to dishes to give them a great sweet umami flavour. If you have any leftovers, it will keep in the fridge for 2 weeks in an airtight container.
Ingredients
30g fresh shiso
2 tbsp miso
2 tsp sugar
1 tbsp tahini paste ( sesame paste)
2 tbsp mirin
2 tbsp water
Preparation
finely chop the shiso leaves
put the miso, sugar, tahini, mirin and water into a pan and stir
well over medium heat
add the shiso and simmer for 3-4 mins, stirring constantly. leave to cool
your shiso miso is now ready to eat. it will last for 7 - 10 days in the fridge
