About the Recipe
This is a delicately flavoured miso soup enhanced by the subtle taste of daikon and Japanese mitsuba, a n easy to grow herb that would remind you of parsley.
Ingredients
140g daikon
500ml japanese dashi stock
1.5 tbsp miso
a few mitsuba leaves*
*if you can't find mitsuba leaves, you could use parsley or rocket as a substitute
Preparation
peel and thinly slice the radish, then cut it into matchsticks
combine the stock & radish in a saucepan. bring to the boil and cook for 4 - 5 mins
put the miso in a ladle and carefully place the ladle in the saucepan. use a spoon to dissolve the miso in the pan, taking care not to break up the daikon
once the miso has dissolved, your soup is ready. garnish with the mitsuba leaves
serve with a bowl of rice and/or with a main dish
