About the Recipe

This soup was something I always looked forward to when my mum made it using fresh sweetcorn. It's something of a "go to" soup in Japan nowadays - you can but ig in cup-a-soup packets and cartons - hoe made Japanese sweetcorn soup is truly something to behold.

Ingredients

250g frozen sweetcorn


20g butter


1 small sliced onion, approx. 130g


1 tsp bouillon


1/2 tsp salt


a little pepper


250ml water


250ml milk


some crutons for garnishing

Preparation

melt the butter in a pan and saute the onion for 3 mins


add the sweetcorn and stir for 2 - 3 mins


add the bouillon, salt, pepper & water and simmer for 15 mins with the lid on


turn off the heat. add the milk, then blend the soup using a hand mixer until it’s smooth


simmer for 5 mins over a medium heat


your sweetcorn soup is ready. garnish with the crutons when you serve
