Taiwan Maze Udon

About the Recipe

If you like your noodle dishes rich and nourishing, then this is the dish for you. Thick udon noodles flavoured with soy sauce and sesame oil topped with a rich, flavoured minced pork and a poached egg. Noodle dishes don't get heartier than this!

Ingredients

30g /1 oz Garlic chives or Chinese chives

2 spring onions

1 packet (2g / 0.07oz) of Katsuo flakes

1 sheet of nori seaweed

1 clove of garlic


for the minced meat sauce:


1 tbsp soy sauce

1 tbsp mirin

1 tsp sugar

1 tsp Chinese Shaoxing wine or sake

1 tsp Oyster sauce

1/2 chinese Chinese Toban Djan chilli bean sauce or Thai Sriracha chilli sauce

1 tsp vegetable oil

150g / 5 oz minced pork

2 packets of udon noodles

1/2 tsp sesame oil

1/2 soy sauce

2 eggs

1 tbsp white vinegar

Preparation

first, prepare the toppings: 


roughly chop the rinsed chives into 5mm / 1/4 inch pieces


finely chop the spring onion 


rub the katsuo flakes in the packet to break them into small flakes


fold the sheet of nori in half. fold again, then fold two more times, before cutting into shreds with scissors


mince the clove of garlic


next, prepare the minced pork sauce:


combine the soy sauce, mirin , sugar, Chinese Shaosing wine, oyster sauce and Toban Djan chilli bean sauce in a bowl


heat 1 tsp of vegetable oil in a frying pan.  add the minced pork and fry for about 3 mins, then add the sauce.  stir fry for another 2 minutes or until the sauce is almost all absorbed


bring a large pan of water to the boil. add the 2 packets of udon and cook according to the instructions on the packet


drain the noodles and mix with 1/2 tbsp of soy sauce & 1/2 tbsp sesame oil


break the egg each into two small bowls


bring a small pan of water to the boil.  add 1 tbsp of white vinegar and swirl the water to get it moving around the pan. immediately add 1 of the eggs into the middle of the water. cook for 2 minutes before gently removing with a spoon or small sieve


repeat the same process for the second egg


now it's time to assemble your Taiwan Maze Udon in bowls:


first, place half the udon noodles into each bowl. next, arrange the minced pork, Chinese garlic chives, spring onion, nori, the minced garlic and katsuo flakes over the udon


last, place the poached egg into the centre of the topping.


mix everything well together with your chopsticks and enjoy!
