Miso Yaki Udon

About the Recipe

This is a great way to enjoy your udon noodles with a rich and quite punchy peppery flavouring - it's easy to prepare and can be on your table in 30 minutes.

Ingredients

1/4 sweet pointed cabbage

1/2 red bell pepper

1/2 small-medium carrot

200g / 7oz belly pork

some black pepper

2 portions of Japanese udon noodles, fresh or frozen

some dried chilli flakes (as much as you wish)

1 tsp garlic paste

a dash of hot sesame oil (or chilli oil)


for the stir fry sauce;


1 tbsp cooking sake

1 tbsp soy sauce

1 tbsp mirin

2 tbsp miso paste

a dash of pepper

1 tbsp vegetable oil

Preparation

first, prepare your vegetables:


chop the cabbage into large chunks. remove the seeds and cut the red bell pepper into thin strips.  last, slice the carrot and then cut into matchsticks


slice the belly pork into small chunks and sprinkle generously with black pepper


next, make your stir fry sauce:


combine the cooking sake, soy sauce, mirin and miso in a bowl. add another dash of black pepper. mix into a sauce and then set aside


now to stir fry:


heat the vegetable oil in a large frying pan. add the sliced pork and stir fry for about 2 minutes


add the vegetables to the pan and stir fry for another 2 minutes

now, add the stir fry sauce, garlic paste, dried chilli flakes and the udon. stir fry for another 3 minutes and your dish is ready to serve


plate up and drizzle with a little sesame oil over the top
