About the Recipe
If there is one dish that I can guarantee will be on a Japanese family table at least once a week, it's this - omurice. Not only is this dish a great way to feed the family in under 30 minutes, it's also a great way to use leftover rice hanging around in the fridge.
Ingredients
1/2 onion, chopped finely
1/4 bell pepper, finely chopped
1 rasher bacon, chopped
30g frozen peas
4 tbsps tomato ketchup
180g cooked white rice
4 eggs
salt & pepper
2.5 tbps oil for frying1/2 onion, finely chopped
1/4 bell pepper, finely chopped
Preparation
for the filling:
heat 1 tbsp oil in a pan and fry the bacon until coloured
add the onion, bell pepper, peas and salt & pepper and fry for 2 minutes
add the rice and ketchup and stir well for further 2 minutes, then set aside in the pan
for the individual omelettes:
heat 2 tsp of oil in a 20cm frying pan
whisk 2 eggs together and add to the frying pan
tip the pan to ensure the omelette covers the whole surface
when the omelette is almost cooked, tip 1/2 the fried rice onto the omelette, slightly one side. now, wrap the fried rice with the omelette
flip the omelette out onto a plate
decorate the omurice with some tomato ketchup and serve
(repeat for yoursecond omurice serving)
