Tofu and Egg Donburi

About the Recipe

Here's how to make your tofu into a complete, nourishing one bowl dish. As you can see form the "how to" section below, I make the topping for this dish in two batches - one for each bowl - but if you wish to save some time, you can always make it all in one and divide into two when you serve.

Ingredients

1 packet of soft tofu (300g)


1 onion (120g)


2 tsp soy sauce


2 tbsp japanese cooking sake


80ml japanese dashi stock


2 tbsp sugar*


3 large eggs, beaten


450g cooked rice


15g rocket for a garnish


* this is ment to be quitea sweet dish - if you prefer it less sweet , just reduce the amount of sugar to 1 tbsp

Preparation

thinly slice the onion


halve the tofu lengthways and cut into 1cm slices


make the toppings individually for this dish: 


put 1/2 the onion in a small pan, add 1/2 the sugar, 1/2 the dashi stock, 1/2 the sake, 1/2 the soy sauce.  cook for 2 minutes


next, add 1/2 the tofu. cook for 3 minutes with the lid on, occasionally spooning some of the sauce over the tofu


add 1/2 of the beaten egg over the tofu and cook with the lid on for 1 minute or until the egg has almost cooked but is still a little bit runny


to serve:


put 1/2 the cooked rice in a bowl and slide the tofu & egg mixture over the top


now repeat for your second serving


when your bowls are ready, garnish with the rocket
