Miso baked Salmon

About the Recipe

This recipe is a great way to wow your family and friends with a different approach to baked salmon. It's especially good for festive ocassions but great for a weekend treat as well!

Ingredients

a half salmon fillet (boneless), rinsed


2 - 3 cloves of garlic

6 tbsp miso

3 tbsp sugar

4 tbsp mirin

2 tbsp soy sauce


1 - 2 tbsp vegetable oil


some aluminium foil


some rocket and cress for garnishing

Preparation

first, make the miso marinade:


chop & mince the garlic and place it in a bowl


add the miso, sugar, mirin and soy sauce and mix everything together well


spread the miso marinade over the half salmon. place in the fridge and marinade for 1 - 2 hours (preferably 2 hours)


heat the oven to 200 C / 395 F (fan).  place a sheet of aluminium foil onto your baking tray.  oil with about 1 tbsp of vegetable oil


carefully transfer the salmon to the foil baking tray. once the salmon is in position, shape the edges of the foil around the salmon, so that the miso marinade won’t leak when you bake the dish. 


bake the  in the oven for 20 minutes


keep the salmon warm until you are ready to serve. last, sprinkle over the garnish of rocket and cress
