Miso minced pork in lettuce leaf wraps

About the Recipe

Miso combines very well with pork and here they join forces in a dish that is a great meal for sharing with family and friends. The miso is combined with sesame oil, soy sauce, ginger and garlic while the pork is blended with bamboo shoots and shiitake mushrooms for a richer, more complex flavour. You can either present your dish on individual plates or on one large, sharing platter.

Ingredients

70g tinned bamboo shoots, rinsed


1 spring onion


2 shiitake mushrooms (dried or fresh)*


1 tbsp sesame oil


250g minced pork


1/2 tsp garlic paste


1/2 tsp ginger paste


1  1/2 tbsps miso


1 tbsp cooking sake


1 tbsp sugar


1 tsp soy sauce


8-10 lettuce leaves, rinsed


*if you use dried shiitake, you will need to soak them in warm water for 15-20 mins before mincing

Preparation

cut the bamboo shoots lengthways and finely chop 


finely chop the spring onion


remove the stalks of the shiitake mushroom and mince them


heat the sesame oil in a frying pan, add the minced pork, ginger and garlic. fry for 2 mins


add the onion, bamboo shoots & mushrooms to the pan, and stir fry for another 2 mins


add the miso, sake, sugar & soy sauce to the pan and stir fry for 2 - 3 mins


place 1/2 of the pork mixture on a bowl together with some lettuce leaves for one serving. spoon some of the mixture onto a lettuce leaf, wrap and enjoy
