About the Recipe
Slow cooked pork belly dishes abound but I honestly have never found one to better this. Even better, cook this in a pressure cooker and it isn't even slow - you can have it read in under an hour! The taste is all about the sauce, of course - in this case, a combination of sake, soy sauce and mirin spiced with a little stem ginger that raises the taste of this dish above the rank and file - do you have any doubts/ Just try this recipe and see...
Ingredients
1 kg boneless pork belly
400g white radish
2 spring onions
2cm piece of ginger
700ml water
100ml soy sauce
100ml cooking sake
70ml mirin
5 tbsps sugar
Preparation
cut the radish into 4 pieces and then halve each piece
top and tail the spring onion
cut the pork belly into 8 chunks
peel the ginger and halve
parboil the pork belly for 1 - 2 mins to remove any impurities
put the water, soy sauce, mirin and cooking sake in a pressure cooker or saucepan and bring to the boil
add the pork, radish and spring onions and simmer for 45 mins (pressure cooker) or 2 - 2.5 hours (saucepan)
rest for 15 mins (or overnight for a richer flavour)
serve with bowl of Japanese rice
