About the Recipe

I make a lot if this sauce during the summer for the barbecue. Not only is it quick to make but it beats the shop bought sauce by a mile (as well as being cheaper!) IMO, off the shelf yakitori sauce is oversweetened and not oil enough - a good yakitori sauce should not only flavour (say) chicken but also baste it while its over the barbecue or under the grill. Your yakitori sauce should be quite loose so don't over boil it in the saucepan - a few minutes of simmering will do just fine.

Ingredients

180ml soy sauce


6 tbsp sugar


90ml mirin


1 small chicken skin


1 spring onion

Preparation

combine all the ingredients in a small saucepan. bring to the boil with the lid on then simmer for 7-8 mins, adjusting the heat to prevent the sauce boiling
