About the Recipe
Kanten (agar agar) is a seaweed product that is full of fibre and contains almost no calories so it is a great medium for guilt free desserts. I used it here to make a two layer dish, one layer with fruit and one layer with fruit juice. I think that it looks rather nice that way. What do you think?
Ingredients
1 tin, fruit cocktail (approx.400g)
150ml (approx.) water
2g x 2 kanten (agar agar) powder
2 tsp sugar
300ml mango juice
some small mint leaves for garnishing
Preparation
add the juice from the fruit cocktail tin to the water making up to 300ml
put the fruit into your glasses
put the water/juice mixture and 2g of kanten powder into a pan. stir on a high/medium heat for 1 min
add the sugar to the pan and stir for 30 seconds, then turn off the heat
stand for 1 - 2 minutes
pour the liquid into the glasses and set aside until firm
next to make the mango kanten, pour the mango juice & 2g of the kanten powder into the pan
heat and stir for 1 minute and then stand for 1 - 2 minutes
pour the mango liquid into the glasses and leave to stand until firmed
garnish with mint leaves and serve
