About the Recipe
Japanese green tea powder, "matcha", is well known for being high in anti-oxidants. Personally, I just like the taste of matcha but I've found that I like it just as much when I use it in baking. Matcha has a rich, nutty flavour so it provides excellent balance to the sweetness of a lot of dessert recipes and this cookie recipe is no exception. The dough in this recipe is quite loose so you only need form the dough into balls - it will spread into a more recognisable cookie form as it cooks.
Ingredients
150g plain flour
1/2 tsp baking powder
1/2 tsp salt
2 tbsp matcha powder
100g white chocolate
120g unsalted butter, softened
80g sugar
1 egg
2 baking sheets
2 oven tray
Preparation
mix the plain flour, baking powder, salt & matcha powder in a bowl
chop the white chocolate into small pieces and set aside
put the butter & sugar in a second bowl and whisk well, then add the egg and whisk again
add 1/3 matcha flour to the butter mixture and mix well, repeat two more times until the matcha flour is all mixed
add the chocolate pieces and mix again
heat the oven to 160’C / 32o F
use two tablespoons to form the cookie dough into balls, place them onto the cooking parchment on a baking tray
bake for approx. 13 minutes
your matcha and white chocolate cookies are now ready
