About the Recipe
No one knows the precise origin of the Japanese fruit "sando" but this clever little innovation has spread far beyond Japan and nowadays is a favourite in many Asian countries. The essence of a fruit sando is simple - soft, white thin sliced sandwich bread with the crusts removed, sweetened thick cream and fresh fruit - simple but once you've tried on, you may well be hooked for life!
Ingredients
4 thin slices of white bread, crust removed*
1 tsp honey
150ml whipping cream
3 strawberries, each sliced into 3 pieces
2 X 5mm / 1/8 inch kiwi slices
Preparation
whisk the cream until the peaks stand
add the honey to the cream and briefly whisk again
spread 1/4 of whipped cream on each slices of bread
put the kiwi slices in the center and place 4 strawberry slices around it
form your sandwich and cut into quarters
