About the Recipe
This is the easiest, quickest way to comfort food nirvana that I know. A rich, oozy slice of toasted cheese boosted with the spicy heat of wasabi and a liitle umami flavouring from the shredded nori. This recipe makes two slices but beware...once you've gobbled those up, you might just want to make the whole thing again!
Ingredients
20g butter
2 tsp wasabi paste
2 thick slices of white bread
120g / 4.5 oz mature cheddar cheese
1/2 nori seaweed sheet
Preparation
soften the butter if using it straight from the fridge. when soft, combine with the wasabi until well blended
toast the bread on one side only to a golden brown colour
meanwhile cut the cheese into 5mm / 0.2 inch slices
when the bread has toasted, put the slices toasted side down onto a chopping board and spread over the wasabi butter
lay the slices of cheese over the wasabi butter
toast again until the cheese is melted and bubbling - this should take 3 - 4 minutes
meanwhile, fold the nori sheet and cut along the fold. repeat 2 or 3 times, then snip the nori into thin matchsticks
sprinkle the nori matchsticks over your wasabi cheese on toast and serve
