About the Recipe
Ishiri sauce is a Japanese seasoning made from fermented squid. It isn't for everyone but if your palate craves adventures of the umami variety, then I'd urge you to try it. There's no better way to experience ishiri sauce thanwhen it's added to a plate of squid and spaghetti mixed in butter in garlic.
Ingredients
150g spaghetti (dry weight)
1/2 medium size onion, peeled
2 large mushrooms, stalks removed
3 cloves of garlic
1/2 tbsp veg oil
150g squid rings
30g salted butter
1 tbsp ishiri sauce
Preparation
thinly slice the onion, mushrooms & garlic
cook the spaghetti in boiling water for 10 mins or according to the packet
heat the oil in a frying pan and saute the garlic for 30 seconds
add the onion and saute for 1 minute
add the mushrooms and saute for 1-2 minutes
add the butter, then the squid and stir for 2-3 minutes
add the ishiri & stir another 30 seconds
add the cooked spaghetti and mix well
your squid spaghetti with ishiri sauce is ready to serve
