About the Recipe
Pasta is an established favourite with the Japanese so it's only natural that over time, some local flavours have been assimilated into the dish. Along with the smoked salmon, this spaghetti is flavoured with soy sauce and oba leaves. If you can't get hold of any oba leaves but won't to try out these flavours, then you use use basil leaves as a substitute.
Ingredients
1/2 red bell pepper
2 cloves garlic
20g / 0.7oz oba leaves
100g / 3.5oz smoked salmon
1/2 lemon
1 tsp salt
170g / 6oz linguine or spagetti
30g / 1oz unsalted butter
2 tbsp of the water from cooking the linguine
some black pepper
1 tbsp soy sauce
25g/0.8oz grated parmesan cheese
Preparation
heat 1/2 tbsp of the oil in a pan, add the mushrooms and pepper and fry for 1 min
boil the water in a large pan and cook the spaghetti for 10 mins or according to the instructions on the packet before draining
add the spaghetti, butter, smoked salmon and shiso to the pan and mix together well
add the soy sauce and mix well
your shiso and smoked salmon spaghetti is ready. top with the parmesan just before serving
