Miso Yaki Udon

This recipe comes courtesy of my collaborator, Yumiko Nikaido who resides in Tokyo. It's a very simple stir fry dish that's easy to create and very quick to prepare. The flavours are quite typical for a Japanese noodle dish but with the added richness and umami of miso and a little kick from the generous use of black pepper and a dash of hot sesame oil just before serving. The recipe uses pork but works very well with chicken and beef as well. As a planet friendly alternative, you won't lose any flavour if you go completely meat free either - just increase the amount of vegetables you plough into the recipe.

I use a mild, rather sweet miso when I make this dish but it works well with darker, saltier varieties of miso as well. If you're just starting out with miso, just remember the general rule: the darker the miso, the stronger and saltier the flavour - choose the miso according to your own taste preference and you won't go wrong.

As I said above, this is a very simple dish to make. You can have it ready in less than 30 minutes.

If this makes you want to introduce some noodles into your culinary life, you can find the Youtube tutorial by clicking Miso Yaki Udon or by scrolling to the bottom of the page. The written recipe is just below.
