If you're a regular reader of my blog, you might remember the other Doria recipes I published earlier this year. I made a Seafood Doria and a Chicken Doria. This time around, I've made a Doria with a meat sauce. If you don't already know, Doria is a Japanese rice based dish - think simple lasagne with rice instead of pasta and you'll get the idea.
This is one of those dishes which is great for colder weather - put this on the dinner table and you'll put a smile on even the most chapped of cheeks.

Meat sauce Doria
ingredients:
(makes 2 servings)
for the meat sauce:
200g minced beef
1/2 tin of tomatoes (200g)
90g onion
30g carrot
1/2 celery stick
1 clove of garlic
1/2 tbsp tomato ketchup
1/2 tbsp tomato puree
1/4 tsp pepper
1/2 tsp salt
1 tbsp olive oil
for the white sauce:
3.5 tbsp plain flour
300ml milk
40g butter
1/8 tsp pepper
1/4 tsp salt
310g cooked rice* wet weight)
15g butter
80g grated cheddar cheese
some chopped parsley for garnishing (optional)
*you can use leftover rice if you have some
how to:
to make the meat sauce:
finely chop the garlic, onion, celery & carrot.
heat the olive oil in a frying pan, add the chopped vegetables and fry for 1-2 mins
add the minced meat, salt & pepper and fry for further 1-2 mins
add the tomato, ketchup & puree, and simmer for 10-15 mins
next make the white sauce, melt the butter in a pan, add the flour and mix well, then add the milk a little at a time and mix well into a smooth sauce over a medium-low heat
mix the butter and cooked rice in a bowl (if you are using leftover cold rice, re-heat it first)
place the rice in an oven proof dish then add the layer of white sauce and top with a layer of meat sauce
add the cheese around leaving the centre as it is (i used a small plastic lid to get a nice uniform shape, but do remember to remove it before grilling!)
grill for 8-10 mins or until the cheese is golden brown
your meat sauce doria is ready. sprinkle some chopped parsley and serve
