We're approaching the end of January and for anyone out there on a diet or a detox, here's another healthy, light dish for you to try - Marinated Turnip with smoked Salmon.
My last post featured turnip as well, so I shan't go into it's health benefits again but I will repeat that turnip is a versatile and tasty vegetable that is much under-appreciated here in the UK.
In this recipe, the turnip is thinly sliced and marinated in rice vinegar - the result is a slightly crunchy, sweet and sour taste that is a perfect compliment to the smoked salmon. This dish makes a great starter or light lunch. You could also serve it as a side dish in a two- or three-dish dinner. What's more, this dish looks attractive too - as long as the turnip and cucumber are thinly sliced, they are a cinch to roll. I decorated the plate with some cress and chopped okra.
