My elder son is living and working in Tokyo at the moment and he sent me this recipe which has become his "go to" regular salad. It's easy to make - only 5 ingredients - tomato, onion, canned tuna, celery and a sheet of nori. The seasoning is equally simple - soy sauce and mirin. The only minor "faff" is taking a little time to steep the raw onion in water, which you change once or twice during the process , to remove the onion's sharpness.
A little slicing, a little mixing and hey presto, your simple Japanese salad is ready! 5 ingredients and ready in 15 mins - you have no excuse!
Oh, I forgot the part about it being healthy and nourishing too!

Japanese tuna and red onion salad
ingredients:
(makes 2 servings)
1/2 red onion
1 stalk celery
1 tuna tin (in oil, 140g net)
1 tomato
1.5 tbsp soy sauce
1/2 tbsp rice vinegar
1/2 sheet of nori, shredded
how to
thinly slice the red onion, soak in water for 5 mins in a bowl, change the water a couple of times, so the onion doesn’t taste bitter and squeeze out the excess water before adding to the salad
thinly slice the celery & tomato
drain the excess oil from the tuna tin, put it in a bowl and break into pieces, add the sliced celery & onion and mix well - that's it!
