Hello everyone. Here's my latest offering - a kanten based dessert made in two layers.
For anyone who hasn't come across kanten before, (agar agar is a close relative,) it's an algae based product used to make jellies and other desserts. It's similar to gelatine but it's completely a non-animal product, so suitable for vegetarians and vegans. It's also full of fibre so it's also great for your digestion.
This recipe is healthy, a cinch to make and it always get the thumbs up when I serve it to guests!
I used some canned "fruit cocktail" to make this but you can, of course, use fresh fruit if you want to. You'll need some fruit juice for the top layer of kanten - I used mango juice here.
Once you've got the hang of making this dish, you'll be able to experiment with all sorts of different colour combinations and layers.

Two layer Fruit Kanten
ingredients:
(makes 4-6 glass cups*)
1 tin, fruit cocktail (approx.400g)
150ml (approx.) water
2g x 2 kanten (agar agar) powder
2 tsp sugar
300ml mango juice
small mint leaves for garnishing
how to:
add the juice from the fruit cocktail tin to the water making up to 300ml
put the fruit into your glasses
put the water/fruit juice & 2g of kanten powder into a pan & stir on a high/medium heat for 1 min
add the sugar to the pan and stir for 30 secs, then turn off the heat and stand for 1-2 mins
pour the liquid into the glasses and set aside until firm
next, make the mango kanten:
pour the mango juice & 2g of the kanten powder into the pan. heat & stir for 1 min and stand for 1-2 mins
pour the mango liquid into the glasses and stand until firmed
garnish with mint leaves before you serve
