What do you eat with your curry? Rice? Naan bread? Well, here is a very popular Japanese
dish that pairs Japanese curry with udon noodles. I have no idea who had the inspiration to combine two elements which, let's face it, don't leap off the page as being ideal partners. My guess is that somebody, sometime, had some leftover curry sauce and some udon and thought, well this will do. That someone put the two elements together, the food alchemy got going and the rest, as they say, is history. Curry udon was one of my favourite childhood meals. When my mother used to make it with, you guessed it, leftover curry sauce. She'd dilute it a little to make it a better partner to the noodles. I think this dish migrated from the home to the restaurant as you can find it in most Japanese noodle shops these days. I make my curry udon in this recipe using chicken but you don't need to use chicken (or any meat for that matter, if you prefer). Curry Udon
ingredients:
(makes 4 servings)
4 portions fresh udon noodles
200g chicken breast
1.2L japanese stock
3 tbsps soy sauce
1.5 tbsps mirin
4 cubes Golden Curry roux
130g onion
130g carrot
130g aubergine
80g green beans
2 tbsps potato flour
some veg oil & chopped spring onions for garnishing
how to:
halve and slice the onion
trim and halve the green beans
peel and cut the carrots in half lengthways and slice them diagonally
halve and slice the aubergine
slice the chicken breast into small chunks.
heat 1 tbsp of veg oil in a large pan and fry the chicken for 2 mins. add the vegetables and fry for 1 min more
add the stock, mirin, and soy sauce to the pan
bring to the boil and simmer for 15 minutes with the lid on
add 4 cubes of Golden Curry cubes and simmer for another 5 mins, stirring occasionally until the curry cubes have dissolved
dissolve the potato flour in a little water and add it to the curry to thicken it. then add the udon and simmer for 5 mins
now your curry is ready just garnish with the chopped spring onions
