This is the final dish in my "Japanese feast" feature which I started last week. You might recall that the other dishes were grilled & salted mackerel and stir fried lotus root. I must admit this dish sounds a little creepy in English, (old lady's fingers) but in Japan, it's simply known as "okra". It isn't indigenous to Japan but it is certainly popular and very easy to grow there. It's also a cinch to make this Curried Okra dish. Together with the mackerel and lotus root, you're getting six veggies plus fish, so this is also uber-healthy.
Okra doesn't have a distinctive flavour so it combines well with stronger flavourings like curry. But what okra lacks in flavour, it makes up for in nutrition - it's full of fibre, has good amounts of vitamins A, C, B6 and K and contains potassium, zinc, copper and phosphorus. It even gives you some protein as well. You can make this curried okra dish in ten mins and put the whole three dish meal together in about thirty mins. You can find the written recipe by clicking Curried Okra and the youtube tutorial is here on the right. You can find the Youtube tutorials for the other dishes by clicking Grilled Mackerel & Stir fried Lotus Root. For the written recipes click Grilled Mackerel & Stir fried Lotus root.
Happy cooking! Kurumi XXXX.
