Made by Kai Houseware in Japan, this 3 stage knife sharpener is the perfect tool for regular conditioning of your kitchen knives. I sharpen my knives on a stone once every month or two. in between times, I use this sharpener (which I think of as a conditioner) for more regular honing and sharpening maintenance of my knife blades. The 3 stage wheels feature a diamond coated straightener to hone the bottom of the cutting edge of the blade, a ceramic stone to hone the whole cutting edge and a third ceramic stage to sharpen the cutting edge. Just draw your knife a few times from heel to point through each stage for a happy, healthy knife. Kai have made this conditioner even better by building in a cover for the conditioner when not in use - when in use, the cover doubles as a handle - it is a very clever, hygienic design.
