This video is about how to make a delicious meat free Egg and Lentil curry. I used Torokeru brand Japanese curry cubes. Torokeru is an S&B brand curry which comes in three flavour categories - Hot, Medium and Mild. I used the Medium heat packet - the cubes have quite a light flavour. Egg and lentils make a good, nutricious alternative to meat. I pop the boiled egg halves in just before serving but if you prefer them to take up some more of the curry flavour, you could always put then in a little earlier - if you do it this way, take care not to break up the eggs as you stir the curry. You can buy Torokeru curry cubes on Amazon, Japanese food stores and other online stores and but I think Amazon is cheaper. If you buy the 1kg catering pack (which is a bargain IMO) just be aware that the curry cubes are much bigger than the ones that come in the 250g pack - so you'll have to cut down on the number of cubes you use accordingly. PS. In fact, I think this recipe works better with rice that's a bit dried out than fresh! This dish doesn't use a sauce so you don't use Japanese curry cubes here - just curry powder. I used quite a mild curry powder but that depends on how hot you like your curry. Like most Japanese curry cubes, Java curry cubes they come in three heat grades, "Low", Middle" and...yes, you guessed it... "High"! You don't have to use Java, you could try the Golden Curry brand instead if that's what you have available. I added a little curry powder to the recipe because I like a little more spice in this dish, but again, it's up to you. Cheddar cheese and curry probably shouldn't work but it really does! This video is about how to make Japanese Eggplant/Aubergine Katsu Curry. Depending on where you are watching from, you may know eggplant as aubergine or brinjal or berenjena! This dish is a great vegetarian and vegan combination of Japanese curry + eggplant katsu served on a donburi which means a dish served on a bowl of rice in Japanese. Deep frying the eggplant in breadcrumbs is one of the best ways of serving it IMO - it just puts it on another level. I use Japanese "panko" breadcrumbs for the best result but at a pinch you can use normal breadcrumbs as well. In this Japanese lamb Curry recipe, I use a Japanese House brand "Vermont Curry" which is a very popular Japanese curry roux.☺️. Lamb meat isn't common in Japan but Japanese curry roux goes well with lamb. House brand Vermont curry comes in three variants, mild, medium and hot but they are all quite mild & fruity.
